Beat it, boil it or whip it into shape, the egg is one of nature's most adaptable - and tasty - basic ingredients. And when you know it's been laid by a happy hen, somehow it tastes even better.
Where would we be without eggs? No sponge cakes, cooked breakfasts, cheesy omelettes, mayonnaise. or that old favourite: boiled egg and soldiers. The trick to the perfect boiled egg is to take it out of the fridge half an hour beforehand - that should stop it cracking. For a runny yoke, boil for 4 minutes, otherwise leave it bubbling away for 7 minutes or so. For a fancy twist, try swapping your buttery soldiers for freshly steamed asparagus tips.

Look out for the Freedom Food label - it means that whatever you've put in your basket, whether it's sausages, salmon, turkey or veal, it's met the strict welfare standards devised and monitored by the RSPCA.
