Roast beef & horseradish sandwiches

The flavours of roast beef and horseradish work so well together. This pub grub favourite is the sandwich version of a Sunday roast!

  1. Cut the bread into six medium thick slices. Spread three of the slices with butter (if using) and top this with the wafer-thin roast beef then a handful of the watercress.
  2. Mix together the horseradish sauce, créme fraîche and lemon juice and season with a little salt and plenty of ground black pepper. Spread this on the other three slices of bread and place over the roast beef and watercress, pressing down gently. Cut each sandwich into 4 triangles and serve.

Make it healthier:
Use half-fat crème fraîche, lighter mayonnaise, be good to yourself Cheddar and seeded or wholemeal bread to make these sandwiches.
You could use an ordinary white slice loaf to make these - it will save you a little time, as well as money.
Skip buttering the bread; and use a little extra creamed horseradish sauce without adding the crème fraîche and lemon juice.
Make a caramelised onion sauce to go on the roast beef sandwiches by slowly cooking a sliced red onion with a little butter and brown sugar until it's completely soft, sweet and thick.
